Potato Rolls
400 degrees for 15-20 minutes - 50
1 pint mashed potatoes 1 pint warm water (2 cups)
2 eggs 3/4 c. shortening
1/2 c. sugar 2 t. salt
2 packages yeast dissolved in 1 T. sugar and 1 cup warm water.
Add enough flour to make the dough, 8 or more cups. Knead, can tell right consistency when soft and no longer sticks to fingers. Roll into roll shapes. let rise for about one hour. Can spread with melted butter before baking.
