Thai Chicken Satay

Ingredients

  • 1/2 cup canned coconut milk
  • 1 1/2 teaspoons ground coriander
  • 1 teaspoon yellow curry powder
  • 1 teaspoon fish sauce
  • 1/2 teaspoon chili oil
  • 1 pound skinless, boneless chicken breast halves - cut into strips
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped unsalted peanuts
  • 12 wooden skewers, soaked in water for 15 minutes
  • 1 cup prepared Thai peanut sauce

Directions

  1. In a medium bowl, stir together the coconut milk, ground coriander, curry powder, fish sauce, and chili oil. Add the chicken breast strips, and stir to coat. Cover, and refrigerate for at least 30 minutes, and up to 2 hours.
  2. Preheat an indoor or outdoor grill for high heat. Thread the chicken strips onto skewers. Discard marinade.
  3. Grill chicken for 2 to 3 minutes per side, until no longer pink. Time will depend on how thick your strips are. Transfer to a serving plate, and garnish with cilantro and peanuts. Serve with peanut sauce for dipping.

Buttermilk Syrup

Ingredients

  • 1 1/2 cups white sugar
  • 3/4 cup buttermilk
  • 1/2 cup butter
  • 2 tablespoons corn syrup
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract

Directions

  1. In a saucepan (use a large one because it will boil up about 4x's its size), stir together the sugar, buttermilk, butter, corn syrup, and baking soda. Bring to a boil, and cook for 7 minutes. Remove from the heat, and stir in the vanilla.

Slow Cooker Chicken and Dumplings

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 1 onion, finely diced
  • 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

Directions

  1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
  2. Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

Cheese Fondue

Ingredients

  • 1 cup dry white wine
  • 1/2 pound shredded Swiss cheese
  • 1/2 pound shredded Gruyere cheese
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg (sometimes I omit)
  • 1 (1 pound) loaf French bread, cut into 1 inch cubes

Directions

  1. Simmer wine in fondue pot. Add Swiss cheese, Gruyere cheese, 1/4 pound at a time. Stir after each addition of cheese until melted. Stir in flour. When all the cheese has melted, stir in salt and nutmeg. Serve with cut-up French bread.

Spanish Rice (skillet or rice cooker)

Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup uncooked white rice
  • 1 onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 cups water
  • 1 (10 ounce) can diced tomatoes and green chiles
  • 2 teaspoons chili powder, or to taste
  • 1 teaspoon salt

Directions-

Rice Cooker

1. Heat oil in a deep skillet over medium heat. Saute rice, onion, and bell pepper until rice is browned and onions are tender.

2. Place rice in cooker, cover with ingredients from skillet, add chili powder on top, then fill liquid to the appropriate line (according to how many cups of rice were used, 1 in this case) first with the tomatoes and green chilies, then cover the rest with water (I usually put in a little extra water, just over the line).


Skillet

  1. Heat oil in a deep skillet over medium heat. Saute rice, onion, and bell pepper until rice is browned and onions are tender.
  2. Stir in water and tomatoes. Season with chili powder and salt. Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.

Asian Pork Tenderloin

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup pineapple juice
  • 1/4 cup coarsely chopped green onions
  • 1/4 cup coarsely chopped shallots
  • 1/4 cup loosely packed fresh cilantro leaves
  • 2 tablespoons coarsely chopped fresh ginger
  • 2 tablespoons honey
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons Emeril's Asian Essence
  • 2 tablespoons chopped garlic
  • 1 tablespoon sesame oil
  • 1 tablespoon crushed red pepper
  • 2 pork tenderloins (about 2 pounds total)
  • Sesame Snow Peas, recipe follows

Directions

  1. Combine all the ingredients except the tenderloins in a food processor and pulse several times to puree. Put the tenderloins in a large plastic storage bag and pour in the marinade. Seal the bag and refrigerate for 1 hour.
  2. Preheat the oven to 400 degrees F.
  3. Heat a large nonstick ovenproof skillet over high heat. When the skillet is hot, add the tenderloins and sear, turning to ensure even browning, about 4 minutes. Transfer to the oven and cook for 18 to 20 minutes, or until an instant-read thermometer inserted in the thickest part reads 145 degrees F. Remove from the oven and let rest for 5 minutes. Alternatively, heat a grill to medium-hot. Grill the tenderloins, turning several times, for 25 minutes, or until an instant-read thermometer inserted in the thickest part reads 145 degrees F. Remove from the grill and let rest for 5 minutes.

Pizza Dough

Ingredients

  • 1 TBSP. yeast
  • 1 3/4 cups warm water
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1/4 cup oil
  • 4 cups flour

Directions

  1. Dissolve yeast in 1 3/4 c. warm water, add sugar, salt, oil and enough flour to make soft but not sticky dough.
  2. Let rise for at least 1 hour.
  3. Bake on an oiled pizza pan at 350 for 15-20 minutes. OR roll out to 1/2" personal pizza size portions and cook on the grill for about 3 minutes on medium high, turn, add toppings and cook for 3 additional minutes.
